We’re off for a camping trip this weekend (wish us luck, it looks like it might rain right now!), and I thought this was the perfect motivation to do some baking with some recipes I’ve been eyeing for awhile. Both come, directly and indirectly, from everybody likes sandwiches.

The first is a maple breakfast cake. It turned out really well, although I’d call it more of a bread, like a banana bread, than a cake. Kind of tastes like pancakes, I guess because of the maple syrup association. It will make great camping breakfast!

Next are these mexican chocolate cookies. So tasty! We had the ibarra chocolate in our cupboard that we bought awhile ago for making hot chocolate, and it really adds lots of flavour to the cookies. You should be able to buy it at any kind of Mexican grocery, if you’re in Toronto I got it at Kensington Market. I think next time I will add more cayenne and pepper, I think I was a bit too much of a chicken with those and didn’t really know how generous to be with the ‘generous pinch’, so they weren’t quite as spicy as I had hoped, but still super tasty!
