Sunday morning is a nice time for these lovely blueberry pancakes, but you could really make them any day, they're so easy. The recipe is a pretty standard pancake recipe, except for the addition of yogurt. We often don't have milk in the house, but almost always have yogurt, which has the happy result of making flavourful, fluffy pancakes. 1 cup white flour 1/2 cup whole wheat flour 1 Tbsp sugar 1 Tbsp baking powder 1/2 tsp salt 1 egg, beaten 3/4 cup plain yogurt 1 cup water 1 cup fresh or frozen blueberries Mix dry ingredients, than add wet ingredients. Stir blueberries in carefully. Scoop onto a greased, hot frying pan and cook the first side until several bubbles appear on the top surface. Flip and cook until golden brown. Serve with butter and syrup.
