Sometimes, what you really need to get you through that last week of February is some treats. And I feel like I am not alone on this one, since I keep seeing delicious recipes popping up all over (see here and here for examples). I try not to make cookies too often because we will just devour the whole batch and then I feel kind of icky from all the sugar. But sometimes, they are just really what’s necessary to get you through a rough day. I had a wicked craving for cookies recently and we had bought some peanut butter chips, so I decided to invent the most decadent cookies possible by combining many varieties of chocolate and peanut butter flavours. They were delicious, needless to say.

Double Chocolate Peanut Butter Cookies
1 1/2 cups cocoa
1 1/4 cups flour
1/2 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt
1/2 cup butter
1 cup peanut butter
3/4 cup white sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla
1/2 cup chocolate chips
1/2 cup peanut butter chips
Beat together eggs, both sugars and butter. Add vanilla and peanut butter. Stir together remaining dry ingredients. Slowly add to wet mixture until combined. Stir in chocolate and peanut butter chips. Drop teaspoonfuls onto a cookie sheet. Bake in a 350 degree oven for 10 minutes.

Hey, these cookies look delicious…I am such a cookie-lover,would like to try these, but wouldn’t know where to find peanut butter chips..wonder if just peanut butter would do…

The ones I used are just the Reese brand chips that they have now. They might be hard to find in Europe, but you should be able to get them in the baking aisle in Canada or the US.

I’ve been on a diet for more than a year. Pictures like this nearly kill me! They just look so good. And yes, I have lost more than 70 pounds, but the cookies still bring about a powerful craving. Good thing they are pictures today.

I tried this recipe tonight, inspired by the picture. I added too much cocoa by mistake – so the mix got a little dry. I threw in another egg … et voila! The kids called them result cookie-brownie puffs. They were really good.

These are awesome. I’ve done them three times now and I’ve found adding an extra egg or even two makes them way more moist. My housemates agree as well, haha.
I just made another batch tonight and made thumbprints in them and added raspberry jam to the center of each. So good. Would definitely recommend it.
