For Cake
2 cups all-purpose flour
2 Tbsp cocoa
1/2 tsp baking soda
1/2 tsp salt
1/2 stick (1/4 cup) unsalted butter, softened

1 cup sugar
1 large egg
1 tsp vanilla
1 tsp distilled white vinegar
1 (1oz) bottle red food colouring (2 Tbsp)
2/3 cup well-shaken buttermilk
For Filling

1 tsp fresh lemon juice

1/2 tsp salt
2 cups confectioners' sugar
Preheat oven to 350 degrees with racks positioned in upper and lower thirds. Line two baking sheets with parchment paper, SUMYCIN recreational. whoopie pies never really got me very excited (not that i’ve ever had one, mind you), but hearing how delicious these are has me curious. I’m bookmarking these for later. and they are all kinds of adorable looking too

Whoopie pies are a long time standard in PA, except they are not red. The recipe in our family cookbook was given to us by a friend of my parents who was famous for bringing them to every “carry in” (local for pot luck). Hers call for oleo and Crisco, no cream cheese.

Thanks for sharing the recipe! I love a good cakey-cookie… I’ve only recently discovered the whoopie pie; they don’t seem to have taken root in my neighbourhood. We’re mostly nanaimo bar and butter tart people.
