If you are buried up to your eyeballs in school work and are freaking out becuase you can’t imagine how there could ever be enough hours in the day to get all the work done that needs to be done, a good thing to do is BAKE something. I haven’t conducted an entirely empirical study, but I know this is something that many people do when studying. There is something relaxing about baking that really calms you down, and then of course you get to eat the results, and we all know that sugar is essential for productive studying.
So, I made this banana bread on the weekend, and it was so good. There is something very lovely about taking something undesirable like brown bananas and turning them into something tasty. And I am convinced that ginger makes anything that is already good extra amazing. Like this…..

Banana Bread with Ginger
1/2 cup butter
1 cup brown sugar
1/2 cup plain yogurt
3 ripe bananas
2 1/4 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp allspice
1 to 2 Tbsp grated fresh ginger
Cream together butter and sugar. Add yogurt and mashed bananas. Combine all dry ingredients in a seperate bowl and add to the wet mixture. Mix in spices and ginger. Bake at 350 for about one hour.

Banana bread and pizza? You must have a lot of work to do. When I make banana bread I put in a whole lot of chocolate- do you think that’s wrong?

Yup, I used to do that too. There’s no better time to bake than when you need to study. And your results look so delicious!

mmm. i have been compiling the ingredients to make pumpkin apple spice bread. its super yummy. and i always bake when i have homework to do.

Thanks- sounds like a fantastic recipe. I am a firm believer in the theraputic benefis of baking! I also have a stash of bananas in the freezer- when they get too brown and I don’t have time to make my usual banana cake I stuff them in the freezer for use later. Now I have a new recipe to try out!

This particular recipe is different than many others that I have tried. The difference is that this one requires both baking powder and baking soda but no eggs. The amount of baking powder here may be too much and gives the bread some bitter after-taste.
It turns out the 3 table spoons of grated ginger are not enough to bring out the ginger flavor. (According to the original recipe, 1 to 2 Tbsp would do)
So I am going to bake another one with more ginger and no baking soda and less baking powder and two eggs.
The bread itself, regardless of the above evaluation, is good. I almost finished it in 3 days.
It is great by itself, or dipping into hot woo-long, or dipping into iced soy milk.

I’ve made this several times but used an alternative for the yogurt to make it vegan: 1/2 cup soy milk with a tbsp lemon juice. A full 2 tbsp ginger is recommended too. Also, chop some nuts up and throw them in!
